This is Frequent Coffee’s first co-ferment release. We rarely get involved with co-ferments, but when we do, it's because we think they're pretty darn special.
Watermelon Splash is an experimental light roast decaf coffee designed to challenge expectations. Produced from Caturra and Colombia varieties and processed at El Vergel Estate, this co-fermented coffee combines controlled honey processing, fruit-driven fermentation, and Swiss Water® decaffeination to deliver a cup that is playful, expressive, and remarkably clean.
At El Vergel Estate and Forest Coffee, this coffee is known as Candy Blast, a name that reflects the candy-like aromatics and vibrant sweetness developed during fermentation.

- 48-hour anaerobic pre-fermentation in sealed plastic bags
- Depulping while retaining mucilage
- Five-day watermelon co-ferment with yeast
- Patio pre-drying under sun exposure
- Mechanical drying in static silos
- Thirty-day stabilization period
- Swiss Water® decaffeination
This coffee begins with a 48-hour pre-fermentation conducted in sealed plastic bags under anaerobic conditions. After depulping, the coffee remains in mucilage and enters a five-day co-ferment with yeast and watermelon, building sweetness and aromatic intensity while maintaining balance.
Following fermentation, the coffee is pre-dried on sun-exposed patios, then finished in static mechanical silos. A 30-day stabilization period allows the flavors to integrate before export.
The Producers
Elias and Shady Bayter, alongside their partner and mother Martha Montenegro, lead El Vergel Estate with a relentless focus on innovation. Former avocado farmers who transitioned into coffee more than a decade ago, the Bayter family has become known for experimental, fruit-forward micro lot processing that pushes Colombian coffee to new levels.
This coffee is planted among native guamo and yarumo shade trees and benefits from El Vergel’s ongoing farm modernization, including upgraded equipment and a solar panel array that reduces their carbon footprint.
Through their export partner, Forest Coffee, the team also supports family housing on the estate and invests in infrastructure improvements at the local school. Sustainability and progress are built directly into the project.
Swiss Water® Decaffeination
Swiss Water® decaffeination is a chemical-free method designed to preserve flavor while removing caffeine. Green coffee is soaked to create Green Coffee Extract, which captures soluble compounds without caffeine.
Beans are immersed in the extract for 8 to 10 hours, allowing caffeine to migrate naturally. The extract is filtered through activated carbon, regenerated for reuse, and continuously monitored to maintain consistency.
Once 99.9 percent of the caffeine is removed, the beans are dried and prepared for roasting, resulting in a clean, expressive decaf coffee.

Nice but not worth the premium for 8oz of beans. This tastes like wild coffee that became tamed by decaffeination. Its sweet, fruity, smooth, but doesn't really pack a punch or impress me like a premium 8oz bag usually does.

Have been brewing this with my AeroPress using pourover recipes and getting AMAZING results... the fruit aromas really explode up out of the grounds the instant the water makes contact and just don't stop coming all the way through the last sip. Super full flavor, bright perky cup with tons of watermelon character. Love it!

This is hands down the best decaf beans that I've brewed that makes a delicious juicy pour over cup and espresso. Brewed via pourover reminds me of watermelon jolly ranchers and watermelon bubblegum for espresso. I wish this was a mainstay!

I love experimental coffees, EA mucilage decaf, micro-farms, weird honeyed blends, so trying this out was an obvious choice for me. It's a great and fruity light roast decaf, and I can even taste the faintest bit of that watermelon in the fruit forwardness. I've tried it with Aeropress (James Hoffman method using a paper filter) as well as Espresso, and they both work fine, maybe favoring the Aeropress a bit for ease of dialing in. My only real gripe, and hear me out, this is going to sound out there, but I feel like watermelon was too safe of a choice, I've had funky fruit forwards coffees that tasted similar, and while the watermelon co-ferment is definitely unique in its flavor, it's more so capturing a flavor that was already there, and evolving it, rather than doing something completely new.
TLDR: try it for the novelty if you like funky fruity coffees, it's not too far out there.

A delightfully fruity cup, with notes of watermelon rind, and mild stone fruit. This was my first dive into this roaster and I am still dialing in my procedure.

This is one of the best decafs I have had. I pulled a turbo shot and get a full body rich coffee with tart watermelon nerds candy. I then pulled 3.5:1 17g in 32 seconds and a rich semi sweet chocolate with soft watermelon sweetness. Absolutely stunning both ways. I also tried as a 15:1 pour over but I think this shines as an espresso drink. Makes a delicious and refreshing iced late as well. As long as it’s in stock, I’m getting a bag with every order.
